Ingredients

  • Button mushrooms - 300 grams
  • Tofu - 100 grams
  • Green bell pepper - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Salt - to taste
  • Olive oil - 1 tablespoon
  • Skewers - 4 (if using wooden, soak in water for 30 minutes)

Steps

  1. Clean the button mushrooms and carefully remove the stems, creating space for the filling.
  2. In a bowl, crumble the tofu and add the diced green bell pepper, chopped red onion, minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, lemon juice, chopped coriander leaves, and salt. Mix well to form the stuffing.
  3. Stuff each mushroom cap with the tofu filling, pressing it gently to pack it in.
  4. Preheat the grill or tandoor to a medium-high heat.
  5. Thread the stuffed mushrooms onto skewers, brushing them lightly with olive oil.
  6. Place the skewered mushrooms on the grill and cook for about 10-15 minutes, turning occasionally until they are evenly charred and cooked through.
  7. Once done, remove from the grill, garnish with additional coriander leaves, and serve hot.
