Ingredients

  • Bell peppers - 2 (1 red, 1 green)
  • Zucchini - 1 medium
  • Paneer (Indian cottage cheese) - 200 grams
  • Greek yogurt - 100 grams
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - 2 tablespoons (chopped)
  • Olive oil - 1 tablespoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Preheat the tandoor or oven to 200°C (392°F).
  2. Cut the bell peppers and zucchini into halves and remove the seeds.
  3. In a mixing bowl, combine Greek yogurt, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, salt, lemon juice, and chopped coriander leaves.
  4. Cut the paneer into small cubes and add it to the yogurt mixture. Mix well until the paneer is coated.
  5. Stuff the bell pepper and zucchini halves with the paneer mixture generously.
  6. Brush the stuffed vegetables with olive oil to enhance grilling.
  7. Thread the stuffed vegetables onto skewers, alternating between different colors of bell pepper and zucchini.
  8. Place the skewers in the preheated tandoor or oven, and grill for about 20-25 minutes, turning occasionally until the vegetables are tender and slightly charred.
  9. Remove the skewers from the oven, let them cool for a minute, and serve hot with mint chutney and lemon wedges.
