- Paneer (Indian cottage cheese) - 200 grams
- Greek yogurt - 100 grams
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - 2 tablespoons (chopped)
- Olive oil - 1 tablespoon
- Skewers - 4 (soaked in water if wooden)
Steps
- Preheat the tandoor or oven to 200°C (392°F).
- Cut the bell peppers and zucchini into halves and remove the seeds.
- In a mixing bowl, combine Greek yogurt, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, salt, lemon juice, and chopped coriander leaves.
- Cut the paneer into small cubes and add it to the yogurt mixture. Mix well until the paneer is coated.
- Stuff the bell pepper and zucchini halves with the paneer mixture generously.
- Brush the stuffed vegetables with olive oil to enhance grilling.
- Thread the stuffed vegetables onto skewers, alternating between different colors of bell pepper and zucchini.
- Place the skewers in the preheated tandoor or oven, and grill for about 20-25 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Remove the skewers from the oven, let them cool for a minute, and serve hot with mint chutney and lemon wedges.
