Bhakri

- Whole wheat flour - 1 cup (120g)
- Rice flour - 1/4 cup (30g)
- Salt - 1/2 teaspoon
- Warm water - 1/2 cup (120ml)
- Ghee or oil - for cooking
- Sesame seeds - 1 tablespoon (optional)
- Fresh coriander leaves - 1 tablespoon (finely chopped, optional)
Steps
- In a mixing bowl, combine whole wheat flour, rice flour, and salt. Mix well.
- Gradually add warm water to the flour mixture, kneading until a soft and pliable dough forms. If using, mix in sesame seeds and chopped coriander.
- Cover the dough with a damp cloth and let it rest for about 10 minutes.
- Divide the dough into 4 equal portions and roll each portion into a ball.
- On a lightly floured surface, flatten each ball into a circle about 6 inches in diameter, using your hands or a rolling pin.
- Heat a tawa or skillet over medium heat. Once hot, place one rolled bhakri on the tawa.
- Cook for about 2-3 minutes until small bubbles appear, then flip it over. Apply ghee or oil on top and cook for another 2 minutes until golden brown.
- Repeat the process with the remaining bhakris.
- Serve hot with butter, jaggery, or yogurt as desired.
