Ingredients

  • Chickpea flour (Besan) - 100 grams
  • Potato - 1 medium, grated
  • Onion - 1 medium, thinly sliced
  • Spinach leaves - 50 grams, chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - as needed
  • Oil - for deep frying

Steps

  1. In a mixing bowl, combine the chickpea flour, grated potato, sliced onion, chopped spinach, green chili, and grated ginger.
  2. Add cumin seeds, turmeric powder, red chili powder, and salt to the mixture.
  3. Gradually add water to form a thick batter; the consistency should be such that it coats the vegetables well.
  4. Heat oil in a deep frying pan over medium heat.
  5. Once the oil is hot, carefully drop spoonfuls of the batter into the oil, making sure not to overcrowd the pan.
  6. Fry until the bhajiyas are golden brown and crispy, about 4-5 minutes per batch.
  7. Remove the bhajiyas with a slotted spoon and drain on paper towels to remove excess oil.
  8. Serve hot with green chutney or tamarind sauce.
