- Chickpea flour (Besan) - 100 grams
- Potato - 1 medium, grated
- Onion - 1 medium, thinly sliced
- Spinach leaves - 50 grams, chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - as needed
- Oil - for deep frying
Steps
- In a mixing bowl, combine the chickpea flour, grated potato, sliced onion, chopped spinach, green chili, and grated ginger.
- Add cumin seeds, turmeric powder, red chili powder, and salt to the mixture.
- Gradually add water to form a thick batter; the consistency should be such that it coats the vegetables well.
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, carefully drop spoonfuls of the batter into the oil, making sure not to overcrowd the pan.
- Fry until the bhajiyas are golden brown and crispy, about 4-5 minutes per batch.
- Remove the bhajiyas with a slotted spoon and drain on paper towels to remove excess oil.
- Serve hot with green chutney or tamarind sauce.
