- Besan (chickpea flour) - 1 cup
- Water - 1/2 cup
- Baking powder - 1/2 tsp
- Salt - 1/2 tsp
- Olive oil - 1 tbsp
- Mixed bell peppers (chopped) - 1/2 cup
- Red onion (sliced) - 1/4 cup
- Tomato (sliced) - 1/2 medium
- Mozzarella cheese (shredded) - 1/2 cup
- Oregano - 1/2 tsp
- Red chili flakes - 1/4 tsp
- Fresh coriander leaves (chopped) - 2 tbsp
Steps
- In a mixing bowl, combine besan, baking powder, salt, and olive oil. Gradually add water to form a smooth batter.
- Heat a non-stick skillet over medium heat and grease lightly with olive oil.
- Pour half of the batter into the skillet and spread it evenly to form a round base, about 1/2 inch thick.
- Cook for 5-7 minutes or until the bottom is golden brown, then flip and cook the other side for an additional 5 minutes.
- Once cooked, remove the base from the skillet and repeat with the remaining batter to make a second base.
- Preheat the oven to 200°C (400°F). Place the cooked bases on a baking tray.
- Spread the chopped bell peppers, sliced onions, and tomatoes evenly over each base.
- Sprinkle shredded mozzarella cheese on top, followed by oregano and red chili flakes.
- Bake in the preheated oven for 10-12 minutes or until the cheese is bubbly and lightly browned.
- Remove from the oven, garnish with fresh coriander leaves, slice, and serve hot.
