Ingredients

  • besan (chickpea flour) - 1 cup
  • water - 3/4 cup
  • turmeric powder - 1/2 teaspoon
  • red chili powder - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • cumin powder - 1/2 teaspoon
  • olive oil - 2 tablespoons
  • bell pepper (chopped) - 1/2 cup
  • onion (chopped) - 1/4 cup
  • tomato (chopped) - 1/2 cup
  • mozzarella cheese (grated) - 1/2 cup
  • fresh basil leaves - a handful

Steps

  1. In a mixing bowl, combine besan, water, turmeric powder, red chili powder, salt, and cumin powder to form a smooth batter.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Pour half of the batter into the skillet, spreading it evenly to form a round pancake. Cook for about 3-4 minutes until the bottom is golden brown.
  4. Flip the chilla and cook for another 2-3 minutes. Remove from skillet and set aside. Repeat with the remaining batter to make a second chilla.
  5. In the same skillet, add the remaining olive oil and sauté the chopped onion, bell pepper, and tomato for 2-3 minutes until slightly softened.
  6. Place the first chilla back in the skillet, top it with the sautéed vegetables, and sprinkle half of the mozzarella cheese on top.
  7. Allow it to cook for another 2-3 minutes until the cheese melts.
  8. Repeat the process for the second chilla. Garnish both chillas with fresh basil leaves before serving.
