Ingredients

  • Fresh chhena (cottage cheese) - 200 grams
  • Powdered sugar - 50 grams
  • Cardamom powder - 1/4 teaspoon
  • Pistachios (finely chopped) - 2 tablespoons
  • Saffron strands - a pinch
  • Milk - 2 tablespoons
  • Rose water - 1 teaspoon

Steps

  1. In a pan, heat the fresh chhena on low heat, stirring constantly for about 5 minutes until it becomes warm and slightly dry.
  2. Add powdered sugar, cardamom powder, saffron strands, and milk to the warm chhena, mixing well until all ingredients are combined.
  3. Cook the mixture for another 5-7 minutes on low heat, stirring continuously until it thickens and starts to leave the sides of the pan.
  4. Remove from heat and let the mixture cool for a few minutes.
  5. Once cooled, knead the mixture gently for 2-3 minutes until smooth.
  6. Divide the mixture into 4 equal portions and shape each portion into small discs or desired shapes.
  7. Garnish each piece with finely chopped pistachios and a few drops of rose water on top.
  8. Allow the Sandesh to set at room temperature for about 10-15 minutes before serving.
