Ingredients
- Fresh chhena (cottage cheese) - 200 grams
- Powdered sugar - 50 grams
- Cardamom powder - 1/4 teaspoon
- Pistachios (finely chopped) - 2 tablespoons
- Saffron strands - a pinch
- Milk - 2 tablespoons
- Rose water - 1 teaspoon
Steps
- In a pan, heat the fresh chhena on low heat, stirring constantly for about 5 minutes until it becomes warm and slightly dry.
- Add powdered sugar, cardamom powder, saffron strands, and milk to the warm chhena, mixing well until all ingredients are combined.
- Cook the mixture for another 5-7 minutes on low heat, stirring continuously until it thickens and starts to leave the sides of the pan.
- Remove from heat and let the mixture cool for a few minutes.
- Once cooled, knead the mixture gently for 2-3 minutes until smooth.
- Divide the mixture into 4 equal portions and shape each portion into small discs or desired shapes.
- Garnish each piece with finely chopped pistachios and a few drops of rose water on top.
- Allow the Sandesh to set at room temperature for about 10-15 minutes before serving.
