Ingredients

  • Full-fat yogurt - 400 grams
  • Jaggery (grated) - 100 grams
  • Milk - 200 ml
  • Cardamom powder - 1/2 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Ghee (for greasing) - 1 teaspoon

Steps

  1. In a saucepan, heat the milk over medium heat until it comes to a gentle boil. Stir occasionally to prevent it from scorching.
  2. Once the milk boils, reduce the heat and add the grated jaggery, stirring until it completely dissolves. Remove from heat and let it cool to room temperature.
  3. In a mixing bowl, whisk the full-fat yogurt until smooth. Add the cooled milk-jaggery mixture, cardamom powder, and vanilla extract. Mix well until fully combined.
  4. Grease two small bowls or ramekins with ghee. Pour the yogurt mixture evenly into the bowls.
  5. Cover the bowls with a clean cloth and let them sit in a warm place for about 6-8 hours or until set. Alternatively, you can place them in an oven with the light on to maintain warmth.
  6. Once set, refrigerate the Mishti Doi for at least 2 hours before serving. Serve chilled and enjoy!
