- Full-fat yogurt - 400 grams
- Jaggery (grated) - 100 grams
- Milk - 200 ml
- Cardamom powder - 1/2 teaspoon
- Vanilla extract - 1/2 teaspoon
- Ghee (for greasing) - 1 teaspoon
Steps
- In a saucepan, heat the milk over medium heat until it comes to a gentle boil. Stir occasionally to prevent it from scorching.
- Once the milk boils, reduce the heat and add the grated jaggery, stirring until it completely dissolves. Remove from heat and let it cool to room temperature.
- In a mixing bowl, whisk the full-fat yogurt until smooth. Add the cooled milk-jaggery mixture, cardamom powder, and vanilla extract. Mix well until fully combined.
- Grease two small bowls or ramekins with ghee. Pour the yogurt mixture evenly into the bowls.
- Cover the bowls with a clean cloth and let them sit in a warm place for about 6-8 hours or until set. Alternatively, you can place them in an oven with the light on to maintain warmth.
- Once set, refrigerate the Mishti Doi for at least 2 hours before serving. Serve chilled and enjoy!
