Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Mustard oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Onion - 1 medium, finely chopped
- Ginger - 1 tablespoon, grated
- Garlic - 1 tablespoon, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Mixed vegetables (carrots, peas, bell pepper) - 150 grams, diced
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, heat the mustard oil over medium heat until it shimmers.
- Add cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 2 minutes.
- Add turmeric powder, red chili powder, and salt, mixing well to combine the spices.
- Drain the soaked rice and add it to the pot, gently stirring to coat the rice with the spices.
- Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
- In the last 5 minutes of cooking, add the mixed vegetables on top of the rice, cover again, and allow them to steam with the rice.
- Once done, fluff the rice with a fork, garnish with fresh cilantro, and serve hot.
