Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Mustard oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 1 tablespoon, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Mixed vegetables (carrots, peas, bell pepper) - 150 grams, diced
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, heat the mustard oil over medium heat until it shimmers.
  3. Add cumin seeds and let them sizzle for a few seconds until fragrant.
  4. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  5. Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 2 minutes.
  6. Add turmeric powder, red chili powder, and salt, mixing well to combine the spices.
  7. Drain the soaked rice and add it to the pot, gently stirring to coat the rice with the spices.
  8. Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  9. In the last 5 minutes of cooking, add the mixed vegetables on top of the rice, cover again, and allow them to steam with the rice.
  10. Once done, fluff the rice with a fork, garnish with fresh cilantro, and serve hot.
