Steps
- Heat olive oil in a saucepan over medium heat.
- Add cumin seeds and sauté until they begin to crackle.
- Add chopped onions, garlic, and ginger; sauté until onions are translucent.
- Stir in the green chili, coriander powder, turmeric powder, and salt; cook for another minute.
- Add the chopped beetroot to the pan and mix well with the spices.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes or until beetroots are tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the coconut milk and lemon juice; heat through without boiling.
- Season with pepper and adjust salt if necessary.
