Ingredients

  • Bear fat - 2 tablespoons

  • Mushrooms - 100 grams, sliced
  • Chicken or vegetable broth - 500 ml
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, melt the bear fat over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the diced carrots and celery, cooking for another 5 minutes until they start to soften.
  4. Add the sliced mushrooms and continue to sauté for an additional 3-4 minutes.
  5. Pour in the chicken or vegetable broth and bring to a gentle simmer.
  6. Add chopped fresh thyme, salt, and black pepper to taste, then let the soup simmer for 15 minutes.
  7. Once the vegetables are tender, remove from heat and serve hot, garnished with fresh parsley.
