Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cloves - 2
  • Green cardamom - 2
  • Cinnamon stick - 1 small piece
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Mixed vegetables (carrots, peas, beans) - 1 cup, chopped
  • Salt - 1 teaspoon (or to taste)
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the vegetable oil over medium heat. Add the cumin seeds, bay leaf, cloves, green cardamom, and cinnamon stick. Sauté for about 1 minute until fragrant.
  3. Add the sliced onion to the pot and cook until golden brown, about 5-7 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  5. Add the mixed vegetables and sauté for 3-4 minutes until they start to soften.
  6. Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
  7. Pour in 2 cups of water and add salt. Bring to a boil, then reduce the heat to low and cover the pot.
  8. Cook for 15-20 minutes or until the rice is tender and the water is absorbed.
  9. Remove from heat and let it sit covered for another 5 minutes.
  10. Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
