- Bay leaf - 1
- Cloves - 2
- Green cardamom - 2
- Cinnamon stick - 1 small piece
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mixed vegetables (carrots, peas, beans) - 1 cup, chopped
- Salt - 1 teaspoon (or to taste)
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the vegetable oil over medium heat. Add the cumin seeds, bay leaf, cloves, green cardamom, and cinnamon stick. Sauté for about 1 minute until fragrant.
- Add the sliced onion to the pot and cook until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Add the mixed vegetables and sauté for 3-4 minutes until they start to soften.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
- Pour in 2 cups of water and add salt. Bring to a boil, then reduce the heat to low and cover the pot.
- Cook for 15-20 minutes or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
