- Basmati rice - 100 grams
- Moong dal (split yellow lentils) - 50 grams
- Water - 600 ml
- Ghee (clarified butter) - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon or to taste
- Ginger (grated) - 1 teaspoon
- Green chili (slit) - 1 small
- Carrot (diced) - 1 small
- Peas (fresh or frozen) - 50 grams
- Coriander leaves (chopped) - for garnish
Steps
- Rinse the basmati rice and moong dal under cold water until the water runs clear, then soak them together in water for 20 minutes.
- In a pot, heat the ghee over medium heat, add cumin seeds, and let them sizzle for a few seconds.
- Add grated ginger and slit green chili to the pot, sauté for another minute until fragrant.
- Drain the soaked rice and lentils, then add them to the pot along with turmeric powder and salt, and mix well.
- Pour in 600 ml of water and add diced carrots and peas. Stir to combine all ingredients.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice and lentils are cooked and water is absorbed.
- Once cooked, fluff the khichdi with a fork, garnish with chopped coriander leaves, and serve hot.
