Ingredients

  • Basmati rice - 100 grams
  • Moong dal (split yellow lentils) - 50 grams
  • Water - 600 ml
  • Ghee (clarified butter) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon or to taste
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1 small
  • Carrot (diced) - 1 small
  • Peas (fresh or frozen) - 50 grams
  • Coriander leaves (chopped) - for garnish

Steps

  1. Rinse the basmati rice and moong dal under cold water until the water runs clear, then soak them together in water for 20 minutes.
  2. In a pot, heat the ghee over medium heat, add cumin seeds, and let them sizzle for a few seconds.
  3. Add grated ginger and slit green chili to the pot, sauté for another minute until fragrant.
  4. Drain the soaked rice and lentils, then add them to the pot along with turmeric powder and salt, and mix well.
  5. Pour in 600 ml of water and add diced carrots and peas. Stir to combine all ingredients.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice and lentils are cooked and water is absorbed.
  7. Once cooked, fluff the khichdi with a fork, garnish with chopped coriander leaves, and serve hot.
