Barfi

Barfi is a traditional Indian dessert that is rich, creamy, and often flavored with cardamom and nuts. This vegan version uses coconut and almond flour to create a deliciously sweet and satisfying treat.

Ingredients

  • Coconut flour - 50 grams
  • Almond flour - 50 grams
  • Coconut milk - 100 ml
  • Maple syrup - 3 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Chopped pistachios - 2 tablespoons
  • Chopped almonds - 2 tablespoons
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. In a non-stick pan, combine coconut flour and almond flour over low heat, stirring constantly for about 5 minutes until lightly toasted.
  2. Add coconut milk, maple syrup, cardamom powder, vanilla extract, and salt to the pan. Mix well and cook for another 10-15 minutes, stirring continuously until the mixture thickens and pulls away from the sides of the pan.
  3. Remove from heat and fold in the chopped pistachios and almonds.
  4. Transfer the mixture to a greased plate or tray and spread it evenly to about 1-inch thickness.
  5. Allow to cool for about 15 minutes, then cut into squares or diamond shapes.
