Barfi is a traditional Indian dessert that is rich, creamy, and often flavored with cardamom and nuts. This vegan version uses coconut and almond flour to create a deliciously sweet and satisfying treat.

- Coconut flour - 50 grams
- Almond flour - 50 grams
- Coconut milk - 100 ml
- Maple syrup - 3 tablespoons
- Cardamom powder - 1/4 teaspoon
- Chopped pistachios - 2 tablespoons
- Chopped almonds - 2 tablespoons
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- In a non-stick pan, combine coconut flour and almond flour over low heat, stirring constantly for about 5 minutes until lightly toasted.
- Add coconut milk, maple syrup, cardamom powder, vanilla extract, and salt to the pan. Mix well and cook for another 10-15 minutes, stirring continuously until the mixture thickens and pulls away from the sides of the pan.
- Remove from heat and fold in the chopped pistachios and almonds.
- Transfer the mixture to a greased plate or tray and spread it evenly to about 1-inch thickness.
- Allow to cool for about 15 minutes, then cut into squares or diamond shapes.
