Ingredients
- Duck Breasts - 2 pieces (about 300g each)
- Coconut Aminos - 2 tablespoons
- Honey - 1 tablespoon
- Garam Masala - 1 teaspoon
- Ground Cumin - 1/2 teaspoon
- Smoked Paprika - 1 teaspoon
- Garlic Powder - 1/2 teaspoon
- Fresh Ginger - 1 teaspoon, grated
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Lime Juice - 1 tablespoon
- Fresh Cilantro - for garnish
Steps
- Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.
- In a bowl, mix together coconut aminos, honey, garam masala, ground cumin, smoked paprika, garlic powder, grated ginger, salt, black pepper, and lime juice to create the marinade.
- Place the duck breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2 hours.
- Preheat your grill to medium-high heat. Remove the duck breasts from the marinade and let excess marinade drip off.
- Place the duck breasts skin-side down on the grill. Cook for about 6-8 minutes, allowing the fat to render and the skin to become crispy.
- Flip the duck breasts and cook for an additional 4-6 minutes for medium-rare, or to your desired doneness.
- Remove from the grill and let rest for 5 minutes before slicing.
- Serve garnished with fresh cilantro and enjoy with your favorite Paleo sides.
