Ingredients

  • Duck Breasts - 2 pieces (about 300g each)
  • Coconut Aminos - 2 tablespoons
  • Honey - 1 tablespoon
  • Garam Masala - 1 teaspoon
  • Ground Cumin - 1/2 teaspoon
  • Smoked Paprika - 1 teaspoon
  • Garlic Powder - 1/2 teaspoon
  • Fresh Ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Lime Juice - 1 tablespoon
  • Fresh Cilantro - for garnish

Steps

  1. Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.
  2. In a bowl, mix together coconut aminos, honey, garam masala, ground cumin, smoked paprika, garlic powder, grated ginger, salt, black pepper, and lime juice to create the marinade.
  3. Place the duck breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2 hours.
  4. Preheat your grill to medium-high heat. Remove the duck breasts from the marinade and let excess marinade drip off.
  5. Place the duck breasts skin-side down on the grill. Cook for about 6-8 minutes, allowing the fat to render and the skin to become crispy.
  6. Flip the duck breasts and cook for an additional 4-6 minutes for medium-rare, or to your desired doneness.
  7. Remove from the grill and let rest for 5 minutes before slicing.
  8. Serve garnished with fresh cilantro and enjoy with your favorite Paleo sides.
