  • Bamboo shoots - 200 grams, sliced

  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
  2. Add the minced garlic, grated ginger, and slit green chili. Sauté for another 2-3 minutes until fragrant.
  3. Stir in the chopped tomato and cook until it softens, about 5 minutes.
  4. Add turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.
  5. Incorporate the sliced bamboo shoots into the mixture and stir to coat them with the spices.
  6. Pour in the coconut milk and bring the mixture to a gentle simmer. Cook for 10-15 minutes until the bamboo shoots are tender.
  7. Sprinkle garam masala on top and mix well. Cook for an additional 2 minutes.
