- Bamboo rice - 1 cup
- Water - 2 cups
- Mixed vegetables (carrots, peas, beans) - 1 cup, chopped
- Onion - 1 medium, finely sliced
- Ginger-garlic paste - 1 teaspoon
- Green chilies - 1, slit
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cloves - 2
- Cardamom - 2
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil (vegetable or ghee) - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Rinse the bamboo rice thoroughly under running water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat the oil over medium heat and add the cumin seeds, bay leaf, cloves, and cardamom. Sauté for a minute until fragrant.
- Add the sliced onion and green chilies to the pot. Sauté until the onions turn translucent.
- Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
- Add the chopped mixed vegetables and sauté for 3-4 minutes until they begin to soften.
- Sprinkle in the turmeric powder, garam masala, and salt. Mix well to coat the vegetables with the spices.
- Drain the soaked bamboo rice and add it to the pot, stirring gently to combine with the vegetables.
- Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
- Once cooked, fluff the bamboo rice pulao with a fork and garnish with fresh coriander leaves before serving.
