Ingredients
- Bamboo rice - 100 grams
- Water - 600 ml
- Coconut milk - 200 ml
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Green chilies - 1, slit
- Salt - to taste
- Fresh coriander - for garnish
- Lemon juice - 1 tablespoon
Steps
- Rinse the bamboo rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large pot, heat a small amount of oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add minced garlic, grated ginger, and slit green chilies to the pot. Sauté for 1-2 minutes until fragrant.
- Stir in turmeric powder and sauté for another minute.
- Drain the soaked bamboo rice and add it to the pot, stirring well to coat the rice with the spices.
- Pour in the 600 ml of water and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the water.
- Once the rice is cooked, add coconut milk and salt to taste. Stir well and cook for an additional 5 minutes, allowing the flavors to meld.
- Remove from heat and add lemon juice. Stir gently to combine.
- Serve hot, garnished with fresh coriander.
