- Bamboo rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Oil (coconut or vegetable) - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Onion (finely chopped) - 1 small (about 100g)
- Ginger (grated) - 1 teaspoon
- Garlic (minced) - 2 cloves
- Mixed vegetables (carrots, peas, bell peppers) - 1 cup (150g)
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh cilantro (chopped) - 2 tablespoons for garnish
- Lemon juice - 1 tablespoon
Steps
- Rinse the bamboo rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat the oil over medium heat and add the cumin seeds. Sauté until they start to crackle.
- Add the chopped onion and sauté until it turns translucent, about 5 minutes.
- Stir in the grated ginger and minced garlic, cooking for another 1-2 minutes until fragrant.
- Add the mixed vegetables, turmeric powder, and garam masala. Cook for about 5 minutes until the vegetables are tender.
- Drain the soaked bamboo rice and add it to the pot. Stir gently to combine with the vegetables.
- Pour in 2 cups of water and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Drizzle with lemon juice and garnish with fresh cilantro before serving.
