- Zucchini - 200 grams, grated
- Chickpea flour (besan) - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Cilantro (fresh coriander) - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1/2 teaspoon, or to taste
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Baking powder - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the grated zucchini with salt and let it sit for 10 minutes to release excess moisture.
- After 10 minutes, squeeze out the excess moisture from the zucchini using a clean cloth or your hands.
- Add the chickpea flour, chopped onion, minced garlic, grated ginger, chopped green chili, cilantro, cumin powder, coriander powder, turmeric powder, garam masala, black pepper, and baking powder to the zucchini.
- Mix all the ingredients until well combined to form a dough-like mixture. If it's too wet, add a little more chickpea flour.
- Shape the mixture into small kofta (oval balls) and place them on the prepared baking tray.
- Drizzle olive oil over the kofta, ensuring they are lightly coated.
- Bake in the preheated oven for 25-30 minutes, turning halfway through, until they are golden brown and firm to the touch.
- Remove from the oven and let them cool slightly before serving.
