Ingredients

  • Zucchini - 300 grams, grated
  • Chickpea flour (besan) - 50 grams
  • Rice flour - 25 grams
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon, or to taste
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Baking powder - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini with a pinch of salt and let it sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, squeeze the zucchini to remove any excess liquid and transfer it back to the bowl.
  4. Add chickpea flour, rice flour, chopped onion, green chili, ginger, coriander leaves, cumin powder, turmeric powder, salt, black pepper, olive oil, and baking powder to the zucchini.
  5. Mix everything until well combined to form a thick batter.
  6. Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly to form fritters.
  7. Bake in the preheated oven for 20-25 minutes or until the fritters are golden brown and crispy on the edges, flipping them halfway through.
  8. Remove from the oven and let cool for a few minutes before serving.
