- Whole wheat flour - 150 grams
- Unsalted butter - 50 grams (chilled and cubed)
- Ice water - 3 tablespoons
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Onion - 1 small (finely chopped)
- Bell pepper - 1 medium (diced)
- Spinach - 50 grams (fresh, chopped)
- Carrot - 1 small (grated)
- Tomato - 1 medium (diced)
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/4 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Eggs - 2 large
- Milk - 100 ml
- Cheese (optional) - 30 grams (grated)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine whole wheat flour and salt. Add chilled butter and rub it into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add bell pepper, carrot, and cook for another 3-4 minutes.
- Add chopped spinach and diced tomato, followed by cumin, turmeric, red chili powder, garam masala, and salt. Cook for 2-3 minutes until the spinach wilts. Remove from heat and let it cool slightly.
- In a bowl, whisk together the eggs and milk. Stir in the cooled vegetable mixture and mix well.
- Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Place the rolled dough in the dish and trim the edges.
- Pour the vegetable and egg mixture into the crust. If using cheese, sprinkle it on top.
- Bake in the preheated oven for 25-30 minutes or until the quiche is set and the top is golden brown.
- Allow it to cool for a few minutes before slicing and serving.
