Ingredients

  • Whole wheat flour - 150 grams
  • Unsalted butter - 50 grams (chilled and cubed)
  • Ice water - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Onion - 1 small (finely chopped)
  • Bell pepper - 1 medium (diced)
  • Spinach - 50 grams (fresh, chopped)
  • Carrot - 1 small (grated)
  • Tomato - 1 medium (diced)
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Eggs - 2 large
  • Milk - 100 ml
  • Cheese (optional) - 30 grams (grated)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine whole wheat flour and salt. Add chilled butter and rub it into the flour until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add bell pepper, carrot, and cook for another 3-4 minutes.
  5. Add chopped spinach and diced tomato, followed by cumin, turmeric, red chili powder, garam masala, and salt. Cook for 2-3 minutes until the spinach wilts. Remove from heat and let it cool slightly.
  6. In a bowl, whisk together the eggs and milk. Stir in the cooled vegetable mixture and mix well.
  7. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Place the rolled dough in the dish and trim the edges.
  8. Pour the vegetable and egg mixture into the crust. If using cheese, sprinkle it on top.
  9. Bake in the preheated oven for 25-30 minutes or until the quiche is set and the top is golden brown.
  10. Allow it to cool for a few minutes before slicing and serving.
