Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Mixed vegetables (carrots, peas, bell peppers, green beans) - 200 grams
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  4. Add the sliced onion and sauté until golden brown, about 5 minutes.
  5. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  6. Add the chopped tomato and cook until it softens, about 3-4 minutes.
  7. Mix in the mixed vegetables, coriander powder, turmeric powder, garam masala, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are slightly tender.
  8. Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
  9. Pour in the 400 ml of water and bring to a boil. Once boiling, cover the pot with a tight-fitting lid and transfer it to the preheated oven.
  10. Bake for 25-30 minutes or until the rice is cooked and the water is absorbed.
  11. Remove from the oven and let it sit for 5 minutes before fluffing with a fork. Garnish with fresh cilantro and serve warm.
