Ingredients

  • Whole wheat flour - 1 cup
  • Olive oil - 2 tablespoons
  • Cold water - 4 tablespoons
  • Salt - 1/2 teaspoon
  • Carrot (finely chopped) - 1/2 cup
  • Green peas (fresh or frozen) - 1/2 cup
  • Potato (boiled and mashed) - 1/2 cup
  • Onion (finely chopped) - 1/4 cup
  • Cumin seeds - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Black pepper (freshly ground) - 1/4 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Egg wash (1 egg beaten with 1 tablespoon water) - For brushing

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine whole wheat flour, olive oil, salt, and cold water. Knead to form a smooth dough, cover with a damp cloth, and let it rest for 15 minutes.
  3. In a pan, heat a teaspoon of olive oil over medium heat. Add cumin seeds and let them splutter.
  4. Add chopped onions and sauté until translucent. Then add carrots, green peas, and mashed potatoes. Cook for another 5 minutes.
  5. Stir in garam masala, turmeric powder, black pepper, chopped cilantro, and lemon juice. Mix well and set aside to cool.
  6. Divide the dough into equal portions and roll each portion into a circle about 1/8 inch thick.
  7. Cut the circle in half, forming two semicircles. Place a spoonful of the vegetable filling on one half and fold the other half over to create a pocket. Seal the edges by pressing with a fork.
  8. Place the puffs on the prepared baking tray and brush the tops with egg wash.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
  10. Remove from the oven and let them cool slightly before serving.
