- Whole wheat flour - 1 cup
- Olive oil - 2 tablespoons
- Cold water - 4 tablespoons
- Salt - 1/2 teaspoon
- Carrot (finely chopped) - 1/2 cup
- Green peas (fresh or frozen) - 1/2 cup
- Potato (boiled and mashed) - 1/2 cup
- Onion (finely chopped) - 1/4 cup
- Cumin seeds - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Black pepper (freshly ground) - 1/4 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Egg wash (1 egg beaten with 1 tablespoon water) - For brushing
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine whole wheat flour, olive oil, salt, and cold water. Knead to form a smooth dough, cover with a damp cloth, and let it rest for 15 minutes.
- In a pan, heat a teaspoon of olive oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until translucent. Then add carrots, green peas, and mashed potatoes. Cook for another 5 minutes.
- Stir in garam masala, turmeric powder, black pepper, chopped cilantro, and lemon juice. Mix well and set aside to cool.
- Divide the dough into equal portions and roll each portion into a circle about 1/8 inch thick.
- Cut the circle in half, forming two semicircles. Place a spoonful of the vegetable filling on one half and fold the other half over to create a pocket. Seal the edges by pressing with a fork.
- Place the puffs on the prepared baking tray and brush the tops with egg wash.
- Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
- Remove from the oven and let them cool slightly before serving.
