  • Spinach - 50 grams, chopped
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the chickpea flour, water, cumin powder, coriander powder, turmeric powder, salt, black pepper, and baking powder to form a smooth batter.
  3. Add the grated carrot, zucchini, chopped spinach, onion, green chili, and cilantro to the batter. Mix well until all vegetables are coated.
  4. Drizzle the olive oil over the mixture and stir to combine.
  5. Scoop spoonfuls of the mixture onto the prepared baking tray, flattening them slightly to form small patties.
