- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - a handful, chopped
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine the chickpea flour, water, cumin powder, coriander powder, turmeric powder, salt, black pepper, and baking powder to form a smooth batter.
- Add the grated carrot, zucchini, chopped spinach, onion, green chili, and cilantro to the batter. Mix well until all vegetables are coated.
- Drizzle the olive oil over the mixture and stir to combine.
- Scoop spoonfuls of the mixture onto the prepared baking tray, flattening them slightly to form small patties.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
