- Lasagna sheets - 6 sheets
- Mixed vegetables (bell peppers, carrots, zucchini) - 200 grams, chopped
- Spinach - 100 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Tomato puree - 200 grams
- Cottage cheese (paneer) - 150 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger; sauté until the onions are translucent.
- Add the chopped mixed vegetables and spinach to the pan. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the tomato puree, red chili powder, turmeric powder, garam masala, salt, and black pepper. Cook for another 5 minutes until the mixture thickens. Remove from heat and let it cool.
- In a baking dish, spread a thin layer of the vegetable mixture at the bottom. Place 2 lasagna sheets on top.
- Spread half of the crumbled cottage cheese over the lasagna sheets, followed by another layer of the vegetable mixture. Repeat the layers: lasagna sheets, cottage cheese, and vegetable mixture.
- Finish with the last layer of lasagna sheets and top with shredded mozzarella cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with fresh coriander before serving.
