Ingredients

  • Lasagna sheets - 6 sheets
  • Mixed vegetables (bell peppers, carrots, zucchini) - 200 grams, chopped
  • Spinach - 100 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Tomato puree - 200 grams
  • Cottage cheese (paneer) - 150 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger; sauté until the onions are translucent.
  3. Add the chopped mixed vegetables and spinach to the pan. Cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the tomato puree, red chili powder, turmeric powder, garam masala, salt, and black pepper. Cook for another 5 minutes until the mixture thickens. Remove from heat and let it cool.
  5. In a baking dish, spread a thin layer of the vegetable mixture at the bottom. Place 2 lasagna sheets on top.
  6. Spread half of the crumbled cottage cheese over the lasagna sheets, followed by another layer of the vegetable mixture. Repeat the layers: lasagna sheets, cottage cheese, and vegetable mixture.
  7. Finish with the last layer of lasagna sheets and top with shredded mozzarella cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  10. Garnish with fresh coriander before serving.
