Ingredients

  • Cauliflower florets - 150 grams
  • Carrot - 1 medium, diced
  • Green peas - 100 grams
  • Bell pepper (red or yellow) - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Plain yogurt - 150 grams
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Korma curry paste - 2 tablespoons
  • Cilantro (coriander leaves) - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Almonds - 30 grams, sliced (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the yogurt, coconut milk, korma curry paste, minced garlic, grated ginger, lemon juice, salt, and black pepper to create the sauce.
  3. Add the cauliflower, carrot, green peas, and bell pepper to the sauce and mix until all vegetables are well coated.
  4. Transfer the vegetable mixture into a baking dish and spread it evenly.
  5. Drizzle olive oil over the top and sprinkle with chopped cilantro.
  6. Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the vegetables are tender and the top is slightly golden.
  8. Garnish with sliced almonds before serving.
