- Plain yogurt - 150 grams
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Korma curry paste - 2 tablespoons
- Cilantro (coriander leaves) - a handful, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Almonds - 30 grams, sliced (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the yogurt, coconut milk, korma curry paste, minced garlic, grated ginger, lemon juice, salt, and black pepper to create the sauce.
- Add the cauliflower, carrot, green peas, and bell pepper to the sauce and mix until all vegetables are well coated.
- Transfer the vegetable mixture into a baking dish and spread it evenly.
- Drizzle olive oil over the top and sprinkle with chopped cilantro.
- Cover the baking dish with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the vegetables are tender and the top is slightly golden.
- Garnish with sliced almonds before serving.
