Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/3 cup
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Mixed vegetables (carrots, bell peppers, peas) - 1 cup, finely chopped
  • Onion - 1 small, finely chopped
  • Ginger-garlic paste - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Salt - 1/2 tsp (for filling)
  • Fresh coriander leaves - 2 tbsp, chopped
  • Lemon juice - 1 tsp
  • Grated cheese (optional) - 1/4 cup

Steps

  1. In a mixing bowl, combine whole wheat flour, 1/2 tsp salt, and olive oil. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
  2. In a pan, heat a little oil over medium heat. Add cumin seeds and let them splutter. Then add chopped onions and sauté until translucent.
  3. Add ginger-garlic paste, turmeric powder, coriander powder, and salt for the filling. Sauté for another minute before adding the mixed vegetables.
  4. Cook the vegetables until they are tender, then stir in garam masala, fresh coriander leaves, and lemon juice. Remove from heat and let the filling cool slightly.
  5. Preheat the oven to 200°C (400°F). Divide the dough into two equal portions and roll each portion into a thin disc.
  6. Place half of the vegetable filling in the center of each disc, sprinkle grated cheese if using, and fold the edges over to seal the filling inside.
  7. Place the rolls on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  8. Remove from the oven, let cool slightly, then slice in half and serve with your favorite chutney or dipping sauce.
