- Whole wheat flour - 1 cup
- Water - 1/3 cup
- Salt - 1/2 tsp
- Olive oil - 1 tbsp
- Mixed vegetables (carrots, bell peppers, peas) - 1 cup, finely chopped
- Onion - 1 small, finely chopped
- Ginger-garlic paste - 1 tsp
- Cumin seeds - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Coriander powder - 1/2 tsp
- Garam masala - 1/4 tsp
- Salt - 1/2 tsp (for filling)
- Fresh coriander leaves - 2 tbsp, chopped
- Lemon juice - 1 tsp
- Grated cheese (optional) - 1/4 cup
Steps
- In a mixing bowl, combine whole wheat flour, 1/2 tsp salt, and olive oil. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
- In a pan, heat a little oil over medium heat. Add cumin seeds and let them splutter. Then add chopped onions and sauté until translucent.
- Add ginger-garlic paste, turmeric powder, coriander powder, and salt for the filling. Sauté for another minute before adding the mixed vegetables.
- Cook the vegetables until they are tender, then stir in garam masala, fresh coriander leaves, and lemon juice. Remove from heat and let the filling cool slightly.
- Preheat the oven to 200°C (400°F). Divide the dough into two equal portions and roll each portion into a thin disc.
- Place half of the vegetable filling in the center of each disc, sprinkle grated cheese if using, and fold the edges over to seal the filling inside.
- Place the rolls on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Remove from the oven, let cool slightly, then slice in half and serve with your favorite chutney or dipping sauce.
