- Potatoes - 300 grams
- Green chilies - 2, finely chopped
- Ginger - 1 inch, grated
- Coriander leaves - 2 tablespoons, chopped
- Turmeric powder - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Salt - 1 teaspoon
- Gluten-free flour (like chickpea or almond flour) - 100 grams
- Baking powder - 1/2 teaspoon
- Water - 100 ml
- Oil - 2 tablespoons (for the filling and brushing)
- Pav bhaji masala - 1 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Boil the potatoes until tender, then peel and mash them in a bowl.
- In a frying pan, heat 1 tablespoon of oil and add mustard seeds and cumin seeds. Once they crackle, add green chilies, ginger, and sauté for 1-2 minutes.
- Add the turmeric powder, pav bhaji masala, and salt to the pan, mixing well before adding the mashed potatoes.
- Stir in the chopped coriander leaves and lemon juice, then remove from heat and let the filling cool.
- In a separate bowl, mix gluten-free flour, baking powder, and a pinch of salt. Gradually add water to form a soft dough.
- Divide the dough into small balls and flatten them into discs. Place a spoonful of the potato filling in the center, fold the dough over, and seal it.
- Arrange the filled dough balls on a baking tray lined with parchment paper. Brush the tops with remaining oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Serve warm with green chutney or tamarind chutney.
