Ingredients

  • Potatoes - 300 grams
  • Green chilies - 2, finely chopped
  • Ginger - 1 inch, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Turmeric powder - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Gluten-free flour (like chickpea or almond flour) - 100 grams
  • Baking powder - 1/2 teaspoon
  • Water - 100 ml
  • Oil - 2 tablespoons (for the filling and brushing)
  • Pav bhaji masala - 1 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Boil the potatoes until tender, then peel and mash them in a bowl.
  3. In a frying pan, heat 1 tablespoon of oil and add mustard seeds and cumin seeds. Once they crackle, add green chilies, ginger, and sauté for 1-2 minutes.
  4. Add the turmeric powder, pav bhaji masala, and salt to the pan, mixing well before adding the mashed potatoes.
  5. Stir in the chopped coriander leaves and lemon juice, then remove from heat and let the filling cool.
  6. In a separate bowl, mix gluten-free flour, baking powder, and a pinch of salt. Gradually add water to form a soft dough.
  7. Divide the dough into small balls and flatten them into discs. Place a spoonful of the potato filling in the center, fold the dough over, and seal it.
  8. Arrange the filled dough balls on a baking tray lined with parchment paper. Brush the tops with remaining oil.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown.
  10. Serve warm with green chutney or tamarind chutney.
