Ingredients
- Basmati rice - 150 grams
- Water - 400 ml
- Turmeric powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Ghee or olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green peas - 50 grams (frozen or fresh)
- Bell pepper - 1/2, diced
- Salt - 1/2 teaspoon (or to taste)
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Wash the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a medium saucepan, heat ghee or olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and garlic to the pan, sauté until the onion is translucent.
- Stir in the diced carrot, bell pepper, and green peas, cooking for another 5 minutes.
- Add the soaked and drained rice to the pan, followed by turmeric powder and salt. Mix well to combine.
- Pour in 400 ml of water, bring to a boil, then remove from heat and transfer the mixture to a baking dish.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Once done, remove from the oven and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
