Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Turmeric powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Ghee or olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green peas - 50 grams (frozen or fresh)
  • Bell pepper - 1/2, diced
  • Salt - 1/2 teaspoon (or to taste)
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
  3. In a medium saucepan, heat ghee or olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  4. Add the chopped onion and garlic to the pan, sauté until the onion is translucent.
  5. Stir in the diced carrot, bell pepper, and green peas, cooking for another 5 minutes.
  6. Add the soaked and drained rice to the pan, followed by turmeric powder and salt. Mix well to combine.
  7. Pour in 400 ml of water, bring to a boil, then remove from heat and transfer the mixture to a baking dish.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Once done, remove from the oven and let it sit covered for an additional 5 minutes.
  10. Fluff the rice with a fork and garnish with fresh cilantro before serving.
