Ingredients

  • Whole wheat flour - 100 grams
  • Spinach - 200 grams (fresh, chopped)
  • Paneer - 100 grams (grated)
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Cumin seeds - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 2 tablespoons
  • Water - as needed
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft dough. Knead for a few minutes and let it rest for 15 minutes.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat. Add cumin seeds, followed by chopped onions, and sauté until translucent.
  4. Add minced garlic and grated ginger, and sauté for another minute until fragrant.
  5. Stir in the chopped spinach and cook until wilted. Add grated paneer, red chili powder, garam masala, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool.
  6. Divide the dough into small balls. Roll each ball into a thin circle. Place a tablespoon of the filling in the center of each circle and fold over to create a roll. Seal the edges by pressing them together.
  7. Place the rolls on a baking tray lined with parchment paper. Brush the tops with the remaining olive oil and sprinkle sesame seeds on top.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown. Serve hot.
