- Whole wheat flour - 100 grams
- Spinach - 200 grams (fresh, chopped)
- Paneer - 100 grams (grated)
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Ginger - 1 teaspoon (grated)
- Cumin seeds - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Olive oil - 2 tablespoons
- Water - as needed
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft dough. Knead for a few minutes and let it rest for 15 minutes.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add cumin seeds, followed by chopped onions, and sauté until translucent.
- Add minced garlic and grated ginger, and sauté for another minute until fragrant.
- Stir in the chopped spinach and cook until wilted. Add grated paneer, red chili powder, garam masala, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool.
- Divide the dough into small balls. Roll each ball into a thin circle. Place a tablespoon of the filling in the center of each circle and fold over to create a roll. Seal the edges by pressing them together.
- Place the rolls on a baking tray lined with parchment paper. Brush the tops with the remaining olive oil and sprinkle sesame seeds on top.
- Bake in the preheated oven for 20-25 minutes or until golden brown. Serve hot.
