- Cold unsalted butter - 50 grams
- Ice water - 30 ml
- Fresh spinach - 150 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 2 large
- Milk - 100 ml
- Grated cheese (optional) - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- While the dough is chilling, heat a pan over medium heat and sauté the onions and garlic until translucent.
- Add the fresh spinach and cook until wilted. Stir in the cumin, turmeric, red chili powder, salt, and black pepper. Remove from heat and let it cool.
- In a separate bowl, whisk together the eggs and milk until well combined. Add the cooled spinach mixture and mix thoroughly.
- Roll out the chilled dough on a floured surface to fit a 20 cm (8 inch) tart pan. Press the dough into the pan and trim the edges.
- Pour the spinach and egg mixture into the prepared crust. If using, sprinkle the grated cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is slightly golden.
- Allow the quiche to cool for a few minutes before slicing and serving.
