Ingredients

  • All-purpose flour - 100 grams
  • Cold unsalted butter - 50 grams
  • Ice water - 30 ml
  • Fresh spinach - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 2 large
  • Milk - 100 ml
  • Grated cheese (optional) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. While the dough is chilling, heat a pan over medium heat and sauté the onions and garlic until translucent.
  5. Add the fresh spinach and cook until wilted. Stir in the cumin, turmeric, red chili powder, salt, and black pepper. Remove from heat and let it cool.
  6. In a separate bowl, whisk together the eggs and milk until well combined. Add the cooled spinach mixture and mix thoroughly.
  7. Roll out the chilled dough on a floured surface to fit a 20 cm (8 inch) tart pan. Press the dough into the pan and trim the edges.
  8. Pour the spinach and egg mixture into the prepared crust. If using, sprinkle the grated cheese on top.
  9. Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is slightly golden.
  10. Allow the quiche to cool for a few minutes before slicing and serving.
