- Whole wheat flour - 150 grams
- Spinach - 200 grams, chopped
- Onion - 1 medium, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1/2 teaspoon, or to taste
- Black pepper - 1/4 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Oil - 2 tablespoons
- Water - as needed
- Butter - 1 tablespoon, melted (for brushing)
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the whole wheat flour with a pinch of salt and add water gradually to form a soft dough. Cover and let it rest for 15 minutes.
- In a pan, heat oil over medium heat, add cumin seeds, and let them splutter.
- Add chopped onions, ginger, garlic, and green chili. Sauté until onions are translucent.
- Add chopped spinach, turmeric powder, garam masala, salt, and black pepper. Cook until the spinach wilts and moisture evaporates. Stir in fresh coriander and set aside to cool.
- Divide the dough into two equal portions. Roll out each portion into a thin circle on a floured surface.
- Place one rolled-out dough on a greased baking dish. Spread the spinach filling evenly over it.
- Cover with the second rolled-out dough, sealing the edges by pressing them together. Cut a few slits on top for steam to escape.
- Brush the top with melted butter and bake in the preheated oven for 25-30 minutes, or until golden brown.
- Remove from the oven, let it cool for a few minutes, then cut into wedges and serve warm.
