Ingredients

  • Fresh spinach - 200 grams
  • Chickpea flour (besan) - 100 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon, or to taste
  • Baking powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Water - as needed

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Wash the spinach thoroughly and chop it finely.
  3. In a bowl, combine the chickpea flour, chopped spinach, onion, green chili, ginger, cumin seeds, turmeric powder, red chili powder, salt, and baking powder.
  4. Add olive oil and mix well; gradually add water to form a thick batter that holds together but is not too runny.
  5. Using a spoon or your hands, drop small portions of the batter onto the prepared baking sheet, spacing them apart.
  6. Bake in the preheated oven for 15-20 minutes, flipping halfway through until they are golden brown and crispy.
  7. Remove from the oven and allow to cool slightly before serving.
