  • Onion - 1 medium, finely chopped
  • Ginger - 1 inch piece, grated
  • Green chili - 1, finely chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - as needed

Steps

  1. Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. In a large mixing bowl, combine the chopped spinach, chickpea flour, chopped onion, grated ginger, chopped green chili, cumin seeds, turmeric powder, red chili powder, salt, and baking powder.
  3. Mix the ingredients well, adding water gradually until you achieve a thick batter-like consistency that holds together but is not too runny.
  4. Using your hands or a spoon, form small, flattened patties or fritters from the mixture and place them on the prepared baking tray.
  5. Brush or lightly spray the tops of the pakoras with olive oil for added crispiness.
  6. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.
