Ingredients

  • Fresh spinach - 200 grams
  • Chickpea flour (besan) - 50 grams
  • Rice flour - 30 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1 small, finely chopped
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Black pepper - 1/4 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon (for greasing)
  • Water - as needed (approximately 2-3 tablespoons)

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Wash the spinach thoroughly, then blanch it in boiling water for 2 minutes, drain, and immediately transfer to cold water to stop cooking.
  3. Once cool, squeeze out excess water from the spinach and chop it finely.
  4. In a mixing bowl, combine the chickpea flour, rice flour, chopped spinach, onion, garlic, ginger, green chili, cumin powder, coriander powder, turmeric powder, salt, black pepper, and fresh coriander leaves.
  5. Mix well and add water gradually until the mixture is thick but can hold shape when formed into fritters.
  6. Using your hands, shape the mixture into small patties or fritters and place them on the prepared baking sheet.
  7. Brush the tops lightly with olive oil for a golden finish.
  8. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fritters are crispy and golden brown.
