- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/2 teaspoon (adjust to taste)
- Black pepper - 1/4 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Olive oil - 1 tablespoon (for greasing)
- Water - as needed (approximately 2-3 tablespoons)
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Wash the spinach thoroughly, then blanch it in boiling water for 2 minutes, drain, and immediately transfer to cold water to stop cooking.
- Once cool, squeeze out excess water from the spinach and chop it finely.
- In a mixing bowl, combine the chickpea flour, rice flour, chopped spinach, onion, garlic, ginger, green chili, cumin powder, coriander powder, turmeric powder, salt, black pepper, and fresh coriander leaves.
- Mix well and add water gradually until the mixture is thick but can hold shape when formed into fritters.
- Using your hands, shape the mixture into small patties or fritters and place them on the prepared baking sheet.
- Brush the tops lightly with olive oil for a golden finish.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fritters are crispy and golden brown.
- Remove from the oven and let cool slightly before serving.
