- Cilantro - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and add cumin seeds until they sizzle.
- Add chopped onions and sauté until they turn translucent.
- Stir in the grated ginger, green chili, and chopped tomato, cooking for another 2-3 minutes.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with turmeric, salt, and black pepper.
- In a bowl, whisk together the eggs until well combined.
- Fold the sautéed spinach mixture into the eggs, then add chopped cilantro and crumbled feta cheese if using.
