  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and add cumin seeds until they sizzle.
  3. Add chopped onions and sauté until they turn translucent.
  4. Stir in the grated ginger, green chili, and chopped tomato, cooking for another 2-3 minutes.
  5. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with turmeric, salt, and black pepper.
  6. In a bowl, whisk together the eggs until well combined.
  7. Fold the sautéed spinach mixture into the eggs, then add chopped cilantro and crumbled feta cheese if using.
