Ingredients
- Whole wheat flour - 200 grams
- Water - 120 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Cooked chicken, shredded - 100 grams
- Onion, finely chopped - 1 medium
- Bell pepper, finely chopped - 1 small
- Garlic, minced - 1 clove
- Garam masala - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Cheese (optional) - 50 grams
- Black pepper - 1/4 teaspoon
- Egg wash (1 egg beaten with 1 tablespoon water) - 1
Steps
- In a mixing bowl, combine whole wheat flour, salt, and olive oil. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 15 minutes.
- In a pan, heat a little oil over medium heat and sauté the chopped onion and garlic until translucent. Add the bell pepper and cook for another 2-3 minutes.
- Add the shredded chicken, garam masala, cumin powder, coriander powder, black pepper, and chopped cilantro to the pan. Mix well and cook for another 5 minutes until heated through. Remove from heat and let it cool slightly.
- Preheat the oven to 200°C (400°F).
- Divide the rested dough into 4 equal portions. Roll each portion into a thin circle on a floured surface.
- Place a portion of the chicken filling in the center of each roti circle. If using, sprinkle cheese on top of the filling.
- Fold the roti over the filling, then roll it tightly into a cylinder. Seal the edges with a little water if necessary.
- Place the rolled rotis seam-side down on a baking sheet lined with parchment paper. Brush the tops with the egg wash.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing in half. Serve warm.
