Ingredients

  • Whole wheat flour - 200 grams
  • Water - 120 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cooked chicken, shredded - 100 grams
  • Onion, finely chopped - 1 medium
  • Bell pepper, finely chopped - 1 small
  • Garlic, minced - 1 clove
  • Garam masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Cheese (optional) - 50 grams
  • Black pepper - 1/4 teaspoon
  • Egg wash (1 egg beaten with 1 tablespoon water) - 1

Steps

  1. In a mixing bowl, combine whole wheat flour, salt, and olive oil. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 15 minutes.
  2. In a pan, heat a little oil over medium heat and sauté the chopped onion and garlic until translucent. Add the bell pepper and cook for another 2-3 minutes.
  3. Add the shredded chicken, garam masala, cumin powder, coriander powder, black pepper, and chopped cilantro to the pan. Mix well and cook for another 5 minutes until heated through. Remove from heat and let it cool slightly.
  4. Preheat the oven to 200°C (400°F).
  5. Divide the rested dough into 4 equal portions. Roll each portion into a thin circle on a floured surface.
  6. Place a portion of the chicken filling in the center of each roti circle. If using, sprinkle cheese on top of the filling.
  7. Fold the roti over the filling, then roll it tightly into a cylinder. Seal the edges with a little water if necessary.
  8. Place the rolled rotis seam-side down on a baking sheet lined with parchment paper. Brush the tops with the egg wash.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before slicing in half. Serve warm.
