Ingredients
- Whole wheat flour - 1 cup
- Split chickpeas (chana dal) - 1/2 cup
- Jaggery (grated) - 1/3 cup
- Cardamom powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Water - as needed
- Coconut oil - 2 tablespoons (for brushing)
Steps
- Soak the split chickpeas in water for 4-6 hours or overnight.
- Drain the soaked chickpeas and cook them in 2 cups of water until soft, about 20-25 minutes.
- Once cooked, drain the chickpeas and mash them well in a bowl.
- In a pan, add the mashed chickpeas, grated jaggery, cardamom powder, and turmeric powder. Cook on low heat until the jaggery melts and the mixture thickens, about 10 minutes.
- Let the filling cool, then divide it into 4 equal portions.
- In a mixing bowl, combine whole wheat flour and salt. Gradually add water to form a soft dough. Cover it with a damp cloth and let it rest for 15 minutes.
- Preheat your oven to 180°C (350°F).
- Divide the dough into 4 equal balls. Roll each ball into a small circle, place a portion of the filling in the center, and fold the edges over the filling to seal it.
- Gently flatten the stuffed dough ball and roll it out into a larger circle, being careful not to let the filling escape.
- Place the rolled Puran Poli on a baking sheet lined with parchment paper. Brush the top with coconut oil.
- Bake in the preheated oven for 15-20 minutes or until golden brown, flipping halfway through for even baking.
- Remove from the oven and let it cool slightly before serving.
