Ingredients

  • Poha (flattened rice) - 1 cup
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chilies - 1, finely chopped
  • Peas - 1/2 cup, fresh or frozen
  • Curry leaves - 8-10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Cashews - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the poha in cold water and let it sit in a colander to drain for about 10 minutes.
  3. In a skillet, heat the olive oil over medium heat. Add mustard seeds and cumin seeds, and let them crackle.
  4. Add chopped onions and sauté until they are translucent. Then, add green chilies and curry leaves, and cook for another minute.
  5. Stir in the chopped tomatoes, peas, turmeric powder, and salt. Cook for 5-7 minutes until the tomatoes soften.
  6. In a large mixing bowl, combine the drained poha with the sautéed mixture. Add lemon juice and chopped coriander, and mix well until everything is evenly coated.
  7. Transfer the mixture to a greased baking dish and spread it evenly. Sprinkle chopped cashews on top.
  8. Bake in the preheated oven for about 15-20 minutes until the top is slightly golden.
  9. Remove from the oven, let it cool for a few minutes, and serve warm.
