- Poha (flattened rice) - 1 cup
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chilies - 1, finely chopped
- Peas - 1/2 cup, fresh or frozen
- Curry leaves - 8-10 leaves
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Salt - to taste
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Cashews - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the poha in cold water and let it sit in a colander to drain for about 10 minutes.
- In a skillet, heat the olive oil over medium heat. Add mustard seeds and cumin seeds, and let them crackle.
- Add chopped onions and sauté until they are translucent. Then, add green chilies and curry leaves, and cook for another minute.
- Stir in the chopped tomatoes, peas, turmeric powder, and salt. Cook for 5-7 minutes until the tomatoes soften.
- In a large mixing bowl, combine the drained poha with the sautéed mixture. Add lemon juice and chopped coriander, and mix well until everything is evenly coated.
- Transfer the mixture to a greased baking dish and spread it evenly. Sprinkle chopped cashews on top.
- Bake in the preheated oven for about 15-20 minutes until the top is slightly golden.
- Remove from the oven, let it cool for a few minutes, and serve warm.
