Ingredients

  • Rice flour - 100 grams
  • Water - 150 ml
  • Salt - 1/4 teaspoon
  • Grated coconut - 50 grams
  • Jaggery (grated) - 30 grams
  • Cardamom powder - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix rice flour, salt, and baking powder.
  3. Gradually add water to the flour mixture, kneading until a smooth dough forms.
  4. In another bowl, combine grated coconut, jaggery, and cardamom powder to create the filling.
  5. Divide the dough into equal portions (about 4-6 pieces).
  6. Flatten each portion into a disc, place a spoonful of the coconut filling in the center, and fold the dough over to seal it.
  7. Lightly grease a baking tray with oil and place the filled pithas on it.
  8. Brush the tops of the pithas with a little oil for a golden finish.
  9. Bake in the preheated oven for 25-30 minutes or until they are lightly golden.
  10. Remove from the oven and let cool slightly before serving.
