- Grated coconut - 50 grams
- Jaggery (grated) - 30 grams
- Cardamom powder - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix rice flour, salt, and baking powder.
- Gradually add water to the flour mixture, kneading until a smooth dough forms.
- In another bowl, combine grated coconut, jaggery, and cardamom powder to create the filling.
- Divide the dough into equal portions (about 4-6 pieces).
- Flatten each portion into a disc, place a spoonful of the coconut filling in the center, and fold the dough over to seal it.
- Lightly grease a baking tray with oil and place the filled pithas on it.
- Brush the tops of the pithas with a little oil for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until they are lightly golden.
- Remove from the oven and let cool slightly before serving.
