- Rice flour - 30 grams
- Cumin powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 100 ml
- Baking powder - 1/2 teaspoon
- Yogurt - 100 grams
- Tamarind chutney - 2 tablespoons
- Mint chutney - 2 tablespoons
- Chopped onion - 1 small
- Chopped tomato - 1 small
- Chopped coriander leaves - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Wash the spinach leaves thoroughly and steam them for about 5 minutes until wilted. Drain and chop finely.
- In a mixing bowl, combine the chickpea flour, rice flour, cumin powder, red chili powder, salt, water, and baking powder to make a smooth batter.
- Fold in the chopped spinach into the batter until well combined.
- Spread the spinach batter evenly on a greased baking tray and bake for 20 minutes or until golden brown.
- Once baked, remove from the oven and let it cool slightly before cutting into squares.
- To serve, place the baked palak pieces on a plate, drizzle with yogurt, tamarind chutney, and mint chutney.
- Top with chopped onions, tomatoes, and coriander leaves for garnish.
