Ingredients

  • Fresh spinach leaves - 200 grams
  • Chickpea flour (besan) - 50 grams
  • Rice flour - 30 grams
  • Cumin powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 100 ml
  • Baking powder - 1/2 teaspoon
  • Yogurt - 100 grams
  • Tamarind chutney - 2 tablespoons
  • Mint chutney - 2 tablespoons
  • Chopped onion - 1 small
  • Chopped tomato - 1 small
  • Chopped coriander leaves - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the spinach leaves thoroughly and steam them for about 5 minutes until wilted. Drain and chop finely.
  3. In a mixing bowl, combine the chickpea flour, rice flour, cumin powder, red chili powder, salt, water, and baking powder to make a smooth batter.
  4. Fold in the chopped spinach into the batter until well combined.
  5. Spread the spinach batter evenly on a greased baking tray and bake for 20 minutes or until golden brown.
  6. Once baked, remove from the oven and let it cool slightly before cutting into squares.
  7. To serve, place the baked palak pieces on a plate, drizzle with yogurt, tamarind chutney, and mint chutney.
  8. Top with chopped onions, tomatoes, and coriander leaves for garnish.
