Ingredients

  • Brown rice - 1 cup
  • Split urad dal (black gram) - 1/4 cup
  • Potato - 2 medium, boiled and mashed
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 inch, grated
  • Mustard seeds - 1 tsp
  • Curry leaves - 8-10 leaves
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Cumin powder - 1 tsp
  • Salt - to taste
  • Olive oil - 2 tbsp
  • Water - as needed
  • Fresh coriander leaves - for garnish

Steps

  1. Soak the brown rice and split urad dal in water for 6-8 hours or overnight. Drain and rinse.
  2. Blend the soaked rice and dal with a little water to make a smooth batter. The consistency should be similar to pancake batter. Transfer to a bowl, cover, and let it ferment for 6-8 hours.
  3. Preheat your oven to 200°C (400°F).
  4. In a pan, heat 1 tablespoon of olive oil over medium heat. Add mustard seeds and let them splutter. Then, add curry leaves, chopped onions, green chili, and ginger. Sauté until onions are translucent.
  5. Add the mashed potato, turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for 2-3 minutes. Remove from heat and set aside.
  6. Once the batter is fermented, stir it gently. Grease a baking dish with the remaining olive oil.
  7. Pour half of the batter into the baking dish and spread it evenly. Layer the potato mixture on top, then pour the remaining batter over it, spreading it gently.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
  9. Remove from the oven, let cool for a few minutes, and garnish with fresh coriander leaves. Cut into pieces and serve hot.
