Ingredients

  • Chickpea flour (besan) - 1 cup
  • Yogurt - 1/2 cup
  • Water - 1/2 cup
  • Baking soda - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Green chili (finely chopped) - 1 small
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine chickpea flour, yogurt, water, baking soda, turmeric powder, red chili powder, cumin powder, salt, ginger paste, and green chili. Mix well to form a smooth batter.
  3. Let the batter rest for 10 minutes to allow fermentation.
  4. Grease a baking dish with a little oil and pour the batter into it, spreading it evenly.
  5. In a small pan, heat the remaining oil over medium heat. Add mustard seeds and let them crackle, then add sesame seeds and sauté for a few seconds.
  6. Pour the tempering over the batter in the baking dish and gently mix it in.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove from the oven and let it cool for a few minutes before cutting into squares.
  9. Drizzle with lemon juice and garnish with fresh coriander leaves before serving.
