Ingredients

  • Buckwheat flour - 100 grams
  • Water - 75 ml
  • Carom seeds (ajwain) - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Ghee (clarified butter) - 1 tablespoon
  • Cumin powder - 1/2 teaspoon
  • Black pepper powder - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon
  • Fresh coriander leaves (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine buckwheat flour, carom seeds, salt, cumin powder, and black pepper powder.
  3. Gradually add water to the flour mixture and knead until a soft dough forms. If the dough is too sticky, add a little more flour.
  4. Add ghee to the dough and mix well. Let the dough rest for 10 minutes covered with a damp cloth.
  5. Divide the dough into small equal portions and roll each portion into a ball.
  6. On a floured surface, roll out each ball into a small circle (approximately 5 inches in diameter).
  7. Place the rolled puris on a baking sheet lined with parchment paper, and sprinkle sesame seeds and chopped coriander on top.
  8. Bake in the preheated oven for 15-20 minutes, or until they are golden brown and crispy.
  9. Remove from the oven and let them cool slightly before serving.
