- Fresh coriander leaves - 100 grams, chopped
- Chickpea flour (besan) - 100 grams
- Rice flour - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Ginger paste - 1 teaspoon
- Garlic paste - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Water - 150 ml
- Olive oil - 1 tablespoon
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the chopped coriander leaves, chickpea flour, rice flour, turmeric powder, red chili powder, cumin seeds, ginger paste, garlic paste, lemon juice, and salt.
- Gradually add water to the mixture, stirring continuously to form a smooth batter. The consistency should be thick but pourable.
- Grease a baking dish with olive oil or line it with parchment paper.
- Pour the mixture into the greased baking dish and spread it evenly.
- Drizzle a little olive oil on top and sprinkle with sesame seeds for garnish.
- Bake in the preheated oven for 30 minutes or until the top is golden brown and a toothpick comes out clean.
- Remove from the oven and let it cool for a few minutes before cutting into squares.
- Serve hot or at room temperature with green chutney or yogurt dip.
