Ingredients

  • Fresh coriander leaves - 100 grams, chopped
  • Chickpea flour (besan) - 100 grams
  • Rice flour - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Water - 150 ml
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the chopped coriander leaves, chickpea flour, rice flour, turmeric powder, red chili powder, cumin seeds, ginger paste, garlic paste, lemon juice, and salt.
  3. Gradually add water to the mixture, stirring continuously to form a smooth batter. The consistency should be thick but pourable.
  4. Grease a baking dish with olive oil or line it with parchment paper.
  5. Pour the mixture into the greased baking dish and spread it evenly.
  6. Drizzle a little olive oil on top and sprinkle with sesame seeds for garnish.
  7. Bake in the preheated oven for 30 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Remove from the oven and let it cool for a few minutes before cutting into squares.
  9. Serve hot or at room temperature with green chutney or yogurt dip.
