- Cilantro - 2 tablespoons, chopped
- Oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Water - 100 ml
- Baking dish - 1 (medium-sized)
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat oil over medium heat, add chopped onion, and sauté until golden brown.
- Add ginger-garlic paste and green chili, and sauté for another minute until fragrant.
- Stir in the pureed tomato, turmeric powder, cumin powder, coriander powder, and salt, cooking until the oil separates from the mixture.
- Mix in the cooked chickpeas and water, allowing it to simmer for 5-7 minutes to blend the flavors.
- Add the kadai masala and lemon juice, stirring well to combine. Cook for an additional 2 minutes.
- Remove from heat and stir in chopped cilantro.
- Transfer the chickpea mixture to a baking dish and spread it evenly.
- Bake in the preheated oven for 20 minutes until bubbly and slightly crisp on top.
- Remove from the oven, garnish with more cilantro if desired, and serve hot.
