Ingredients

  • Whole Wheat Flour - 1 cup
  • Water - 1/4 cup (adjust as needed)
  • Salt - 1/2 teaspoon
  • Oil - 2 tablespoons (for dough)
  • Yellow Moong Dal (split yellow lentils) - 1/2 cup
  • Cumin Seeds - 1 teaspoon
  • Coriander Powder - 1 teaspoon
  • Garam Masala - 1/2 teaspoon
  • Red Chili Powder - 1/2 teaspoon
  • Hing (Asafoetida) - a pinch
  • Fresh Coriander Leaves - 2 tablespoons (chopped)
  • Oil - 1 tablespoon (for filling)
  • Black Pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine whole wheat flour, salt, and 2 tablespoons of oil. Gradually add water and knead into a smooth dough. Cover and let it rest for 20 minutes.
  2. Rinse the yellow moong dal and soak it in water for 30 minutes. Drain and set aside.
  3. In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the soaked moong dal, coriander powder, garam masala, red chili powder, hing, and black pepper. Stir well and cook for about 5-7 minutes until the dal is slightly softened. Remove from heat and mix in chopped coriander leaves. Allow the filling to cool.
  5. Preheat the oven to 180°C (350°F).
  6. Divide the dough into equal portions and roll each into a small ball. Roll out each ball into a small circle, about 10 cm in diameter.
  7. Place a spoonful of the moong dal filling in the center of each circle. Fold the edges over the filling to create a semi-circle and seal the edges by pressing them together.
  8. Arrange the kachoris on a baking tray lined with parchment paper. Brush them lightly with oil.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown, flipping halfway through for even baking.
  10. Serve hot with your choice of chutney or sauce.
