- Carrots (grated) - 300 grams
- Whole milk - 200 ml
- Condensed milk - 100 grams
- Ghee (clarified butter) - 30 grams
- Sugar - 30 grams
- Cardamom powder - 1/2 teaspoon
- Almonds (chopped) - 2 tablespoons
- Cashews (chopped) - 2 tablespoons
- Raisins - 2 tablespoons
- Saffron strands - a pinch
- Vanilla extract - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large pan, heat the ghee over medium heat and add the grated carrots. Sauté for about 5 minutes until they soften.
- Pour in the whole milk and bring the mixture to a simmer. Cook for 10-15 minutes, stirring occasionally, until the milk reduces and thickens.
- Add the condensed milk, sugar, cardamom powder, vanilla extract, and saffron strands to the carrot mixture. Stir well and cook for an additional 5 minutes.
- Remove from heat and mix in the chopped almonds, cashews, and raisins.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Bake in the preheated oven for 20-25 minutes or until the top is set and slightly golden.
- Remove from the oven and let it cool before serving. Garnish with additional nuts if desired.
