Ingredients

  • Carrots (grated) - 300 grams
  • Whole milk - 200 ml
  • Condensed milk - 100 grams
  • Ghee (clarified butter) - 30 grams
  • Sugar - 30 grams
  • Cardamom powder - 1/2 teaspoon
  • Almonds (chopped) - 2 tablespoons
  • Cashews (chopped) - 2 tablespoons
  • Raisins - 2 tablespoons
  • Saffron strands - a pinch
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, heat the ghee over medium heat and add the grated carrots. Sauté for about 5 minutes until they soften.
  3. Pour in the whole milk and bring the mixture to a simmer. Cook for 10-15 minutes, stirring occasionally, until the milk reduces and thickens.
  4. Add the condensed milk, sugar, cardamom powder, vanilla extract, and saffron strands to the carrot mixture. Stir well and cook for an additional 5 minutes.
  5. Remove from heat and mix in the chopped almonds, cashews, and raisins.
  6. Transfer the mixture to a greased baking dish, spreading it evenly.
  7. Bake in the preheated oven for 20-25 minutes or until the top is set and slightly golden.
  8. Remove from the oven and let it cool before serving. Garnish with additional nuts if desired.
