Baked Dhokla

Ingredients
- Besan (chickpea flour) - 1 cup
- Yogurt (plant-based) - 1/2 cup
- Water - 1/2 cup
- Eno fruit salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chili (finely chopped) - 1
- Ginger (grated) - 1 teaspoon
- Salt - 1 teaspoon
- Coriander leaves (chopped) - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine besan, yogurt, water, turmeric powder, green chili, ginger, and salt. Whisk until you have a smooth batter.
- Add Eno fruit salt to the batter and mix gently until it becomes frothy.
- Grease a baking dish with a little oil and pour the batter into it, spreading it evenly.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- In a small pan, heat oil over medium heat. Add mustard seeds and let them splutter, then add sesame seeds and stir for a few seconds.
- Pour the tempering over the baked dhokla and sprinkle chopped coriander leaves on top.
- Let it cool for a few minutes before cutting into squares and serving.
