Ingredients

  • Besan (chickpea flour) - 1 cup
  • Yogurt (plant-based) - 1/2 cup
  • Water - 1/2 cup
  • Eno fruit salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili (finely chopped) - 1
  • Ginger (grated) - 1 teaspoon
  • Salt - 1 teaspoon
  • Coriander leaves (chopped) - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine besan, yogurt, water, turmeric powder, green chili, ginger, and salt. Whisk until you have a smooth batter.
  3. Add Eno fruit salt to the batter and mix gently until it becomes frothy.
  4. Grease a baking dish with a little oil and pour the batter into it, spreading it evenly.
  5. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. In a small pan, heat oil over medium heat. Add mustard seeds and let them splutter, then add sesame seeds and stir for a few seconds.
  7. Pour the tempering over the baked dhokla and sprinkle chopped coriander leaves on top.
  8. Let it cool for a few minutes before cutting into squares and serving.
